Recipe for Herb Ghee
In Ayurveda there are few substances more nourishing than Ghee. Liquid gold, it has been used for centuries in maintaining the health of the healthy and healing the dis’eased. It has a calming, warming, and grounding quality. Ghee helps lubricate the digestive tract as well the buteric acid in Ghee feeds the good gut bacteria. We have taken this beautiful substance and added the bounty of herbs from our garden to create a deliciously healthful accompaniment to any meal. This Herb Ghee recipe is easy, inexpensive and a great way to use the abundance of fresh summertime herbs from the garden.
Herb Ghee
1 lb unsalted cultured organic butter
1/3 cup each chopped fresh garden sage and tarragon, washed with cool water and dried completely with towel
2 tsp fine sea salt
Tools you may need: cheese cloth, pyrex or heat resistant glass bowl, small mason jars, wooden spoon, sauce pan
Melt butter in sauce pan on medium heat, stir lovingly. Stir while looking into the eyes of a loved one or while remembering sweet moments in your life. This will ensure that Prana is infused into your Ghee from your eyes directly into the ghee. (Prana is the life force, the essence, juice of life. It is what tickles your belly when you fall in love and brings tears of joy when watching your child play. Prana is breath and god and the sweetness of life.)
Continue to stir for about 20 minutes, the ghee will change appearance a few times from thin bubbly to ominous stillness to thick tiny bubble a foamy layer. use the spoon at this time to move away the foam to see if milk solids are collecting on bottom of pan.
When you see the milk solids falling to bottom like brown glitter falling from the sea of liquid sun remove pan from heat and let sit 5 minutes. While pan is sitting place herbs and salt into heat resistant class bowl , I use a big pyrex measuring cup. place cheesecloth over top of glass and carefully strain hot Ghee through cloth over herb mixture. You want to strain off foam and milk solids,. The herbs will release their beautiful fragrance into the hot ghee.
I give the ghee an hour to cool down to thicken a bit then pour into small mason jars for storing. Herb Ghee stores well in fridge, it freezes well too for use in winter.
