Delicata Squash Perfect side dish or entree for no meat Monday

Very important first step to prepare this dish!!!

Directions for first step: Shut off your phone, put it in the other room, stand near your Delicata with your feet hip distance apart, feel the bottoms of your feet grounded into the floor. With arms at your side, raise only your shoulders up towards your ears and tense the muscles. Take a deep breath, as deep as possible, hold it. Hold it until the need for air overwhelms and then slowly exhale as you relax your muscles and lower your shoulders down, reaching your fingertips toward the floor to ease shoulders back and down away from ears, relax relax relax, . then breath easy for a few breaths, Enjoy the feeling. Close your peaceful moment with sweet thoughts of gratefulness. Bring to mind something or someone you are grateful for, your family, friend, self, health, anything you choose, grateful for rain, sun, cool air, warm air, what ever comes to mind in that moment. Now one more slow deep breath this time on the inhale say what or who you are grateful for, out loud or in your mind and as you exhale repeat; thank you , thank you, thank you. Now you are ready to cook!

Recipe Makes 2 servings

Ingredients:

1 large Delicata squash

1 onion

2 cloves garlic

1/2 cup Creme Fresee

1/4 cup hard cheese (Parmesan, Regiano)

olive oil

salt

pepper

Your own creativity

Cut Delicata squash in half lengthwise drizzle olive oil (or herb ghee) salt pepper cook on 350 for about 30 minutes. remove from oven and let sit a few minutes, When cooled slightly, scoop out center and put in bowl.

In other pan sauté garlic and onions until translucent add salt pepper. Take off heat add most of Creme Fresshe, and most of Parmesan. Stir together with squash center and replace back into squash shells, top with drizzle of olive oil and sprinkle with cheese. Place back into oven at 350 until top golden brown, about 10-15 minutes. Serve with dollop of creme freshee and parmesan sprinkle.

Lots of variations available in this adaptable dish.

Add seasonal herbs, or whatever cheese available from last nights charcuterie board. Add herbs from CSA herb bundle, This dish can be prepared on grill with same directions, either way is delicious. Allow your creativity full permission to elaborate on this dish as your spirit sees fit.
