What to do with Cucumbers

So many cucumbers this season for us, we would like to share this delicious side dish. Perfect way to cool down on warm summer days.

Cool Cucumber Raita

Delicious and different.

Ingredients:

1 large cucumber, peeled and shredded makes about a cup

1 cup of plain yogurt

1/2 t salt

1/2 t ground pepper

1/4 t ground cumin

1/2 cup chopped cilantro

Mix all ingredients together in large bowl, best to refrigerate overnight to let all the flavors marry and incorporate. But if you don’t have that much time at least let sit in fridge for a half hour. And that is it! Super easy! We love it as a side dish with something spicy like Billy’s pulled pork, it has a brilliant cooling property. It is also a good condiment for dishes like, tacos, Indian Korma, burgers, falafel…

Shredded carrots add color but optional

We use Siggi’s plain nonfat yogurt, we like it better than Greek yogurt in this recipe
