Wholehearted CSA Beet Salad

Here is a delicious super healthy no cook, vegan, and gluten free, beet salad recipe. For when you are looking for a quick something yummy that is also nourishing.

Prep time: 10 minutes or less

Ingredients:

1 cup of our own organic shredded raw beets

Zest and juice of 1 lemon

1 cup of softened or canned beans

1 tsp of mustard seed or 1 TBS of prepared mustard

1 tsp Honey

1 TBS white vinegar

Sea salt and fresh ground pepper to taste

Wholehearted CSA Lemon Balm

Gather ingredients along with a large mixing bowl. Have your favorite music playing in the background. Take a long deep inhale, close you eyes, hold the breath in and feel your lungs expanded and full, take in a little more breath… and when the need to release the breath is reached slowly exhale. Let your shoulders fall down away from your ears and back squeezing your shoulder blades together. Allow your breath to return to its natural rhythm,. Keeping your shoulder blades squeezing together, pushing chest forward and standing tall let your chin to lower your chest for a moment, feel the stretch down the back of your head and neck, holding solid surface if needed, Then let your eyes open and track up the wall to the ceiling until you are looking strait up at the ceiling above as far as is comfortable for you. Release your shoulder blades and return your gaze to forward. Looking forward lower left ear to left shoulder stretching the right side of the neck, then right ear to right shoulder stretching left side of neck all the time breathing easy, noticing and feeling the sensations that this relaxation exercise releases. Now you are ready to prepare food. Food should always be prepared with love and as much peace and you can create in your body and mind. Our mood and temperament infuses into the meals we create, even the snacks we sometimes mindlessly pick on absorbs our energy and becomes our nourishment. Always create a sweet inner space before working with food, as clear and fresh as you would want the physical space to prepare food on.

Now we are ready…

Shred beets into large mixing bowl and zest and juice the lemon over the beets. ADD all other ingredients stir and let sit in fridge for half hour, overnight is best but at least half hour. Vinegar and lemon juice will break down beets to a softer version of themselves. Feel free to add variations as your heart desires, I like white beans in this recipe and usually have soaked cooked beans in my fridge for meals but sometimes I use cans when I don’t have beans ready to use. No mustard seed, no problem, prepared mustard is fine, I have used dijon in this recipe and its delicious. Give your self full freedom to be creative with everything, then turn the music up and dance in the kitchen. this infuses good energy into the space too.
